SPENCERVILLE ó Janis Griffin is pressed for time. She's choir director/musical director for grades 5 to 12, where she just cast "Wizard of Oz." She's a clarinetist in the Lima Area Concert Band. Her husband is a church musician, so they're very involved there.

But that's just the way she likes it.

Her late mother was a farm wife, Griffin said, helping with 1,200 acres between Findlay and Mount Blanchard.

"She'd fix hamburgers and run back out to the tractor," Griffin said. "Mom was on the tractor full time."

But there was always dessert, because her mother would bake ahead and freeze all the goodies.

When Griffin started 4-H, she baked. Her mom would direct from the kitchen table, but overall let her find her way herself. After her mother died, Griffin inherited the cookbooks.

"I'm a baker, not a cook," Griffin said. "If you go to the house right now, there's not a whole lot of food in the refrigerator, but the freezer is full of yummy things."

She recently entered her first baking contest as an adult at the Allen County Fair. Her cut-out cookie recipe, from an aunt, is a family secret. But today she shares an aunt's brownie recipe, a recipe that's almost shocking in its simplicity ó and they happen to be delicious. She's renamed them "Rehearsal Brownies" because she bakes them often and brings them to school.

"I have great joy in making things Ö and watching people enjoy it," Griffin said. "Itís very rewarding."

More than that, baking is sentimental for her.

"Cause thatís home. Baking is home," Griffin said. "And Iím hoping my daughter would do the same thing."
