Developing an appreciation for Brussels sprouts

LIMA — The first time Austin Musto tried Brussels sprouts, he didn’t like them.

Instead of giving up on them entirely, Musto kept an open mind. His training at Apollo Career Center’s culinary arts program helped. So when he was faced with organizing a menu for a competition, he decided to make another run at the vegetable.

“I ended up looking up Brussels sprouts,” he said, explaining they’re healthy. “So I figured out a way to make a healthy food taste good.”

A little bacon doesn’t hurt.

Musto is a senior at Apollo/West Central Learning Academy. He decided to attend Apollo when he visited for a tour in the eighth grade. By that time, he had a hobby of cooking and enjoyed helping make dinner for his younger sisters.

“My whole family cooks,” he said. “It’s a passion. If I get mad or any emotion, I can put it into my cooking. … I just love the smells, the tastes, everything.

“I’ve been told to do something, my whole life, you love as a career,” he said. “I decided to further my education and make this my career.”

And now, Musto has developed a new appreciation for Brussels sprouts.

“I’m actually planning on doing the Brussels sprouts again for competition but changing it up again a little bit,” he said.
