LIMA — She’s known since the sixth grade she wanted to pursue a career in food.


Lauren Harvey is a senior at Apollo Career Center. She has focused her studies there for two years, transitioning from Elida High School.


“I just, like, started watching cooking shows all the time,” Harvey said, thinking back about how her interest in food began.


Eventually, she also started cooking dinner for her family.


“I love being able to create something that someone’s going to love,” Harvey said. “I love being able to help my mom out.”


Harvey is the oldest of four girls at home, and she has also taught some cooking skills to her sisters.


“I actually love it. I want to be a culinary teacher,” Harvey said. “I want to be a Mrs. (Carrie) Hamilton.”


Hamilton is the culinary arts teacher at Apollo Career Center.


The recipe Harvey shares today was for a competition, for which she had to plan an entire menu.


“Everybody does apples. Pears are a little bit different,” she said.


Bosc pears are best for this recipe, as they’re firmer and handle the cooking better, Harvey said.


She shared a few tips: When tempering, go really slowly or the eggs will scramble. The strainer is important, as it takes out the lumps. Don’t worry if the butter and sugar mixture looks lumpy at first; it will smooth out.


Her favorite part of the dish?


“When you eat all of it together,” she said. “It’s, like, a great combo.”
