Paxson, LimaWalnut filling 1/2 cup water1 cup granulated sugar2 cups walnuts, finely chopped1/2 cup golden raisinsZest of one orangeZest of one lemonBring water and sugar to a boil. Remove from heat. Add walnuts, raisins and zests. Mix well and chill. (Can be chilled overnight. Let stand at room temperature for an hour before use.)Cookie dough 2 sticks butter, room temperature2 sticks margarine, room temperature6 cups flour3/4 cup sugar4 egg yolks1 teaspoon vanilla1 cup sour creamPreheat oven to 350 degrees. Mix all dough ingredients well and chill dough for 1 hour. Roll dough about 1/4-inch thick on a floured surface in batches. Cut rolled-out dough into 1 1/2 X 2-inch squares. Put 1/2 teaspoon filling in the center of each square. Fold two opposite sides to the center and press down a little to fasten. Place on an ungreased cookie sheet. Bake 10 to 12 minutes or until just slightly brown. Before serving, dust with powdered sugar.
